Protein Power Pumpkin Cookies



Who doesn't like a cookie that is good for you & has protein and fiber all wrapped up in one cookie! I saw this first at Thinspired at this post. She explained some substitutions she made like using some wholewheat flour for half of the oats because she ran out of oats and using vanilla protein powder plus adding a little extra agave nectar for sweetness. I might use raisins instead of chocolate chips but that is just me! The original recipe is from Megan's Munchies. Here is the original recipe:

Ingredients:
1 cup pumpkin
1/4 cup applesauce
1/2 tsp. cinnamon
1/2 tsp. pumpkin pie spice
2 tbsp protein powder of choice
1 tbsp agave nectar
1/2 cup mini chocolate chips
2 cups rolled oats

Preheat oven to 350 degrees. Combine all the ingredients in the order listed. Mix until well combined. Drop cookies onto baking sheet and press down slightly. Bake for 15 minutes. Makes approximately 12 cookies.
