Eggs with Black Bean Salsa



yields: 2 servings

Minutes to Prepare: 5Minutes to Cook: 12Number of Servings: 2

Ingredients:

1 Tbsp best quality olive oil
1 small onion, chopped
1 clove garlic, passed through a garlic press
1 tsp minced fresh jalapeno pepper
1 19oz can of black beans, drained and rinsed
2 plum tomatoes, chopped
1 cup salsa
2 Tbsp chopped fresh cilantro
Dash Worcestershite sauce
5 egg whites
1 whole egg
Eat- Clean cooking spray


Directions

1. In saucepan, heat oil over medium heat; cook onion, garlic and jalapeno for 3 to 5 minutes or until softened.
2. Stir in beans, tomatoes and salsa. Cook for several minutes or until thickened. Stir in cilantro and Worcestershire sauce.
3. Meanwhile, whip egg whites and whole egg together in a bowl. Spray large skillet and heat over medium heat. Pour eggs into hot skillet and cook till just done.
4. Spoon salsa onto heated plates. Settle eggs on top of the salsa.
