Mexican Mocha Caliente

1/4 cup cocoa powder
1/8 tsp ground cinnamon
pinch of cayenne pepper
1 cup low-fat milk
1 cup freshly brewed strong coffee/espresso
2 Tbsp honey
cinnamon sticks, to garnish

In a heavy-bottomed small saucepan, whisk together cocoa powder, cinnamon, cayenne pepper and milk until thoroughly combined. Set burner to medium-high heat, and add coffee and honey. Heat, whisking frequently, until hot and frothy.

Do Not let mixture boil. Immediately remove from heat and pour into mugs. Serve garnished with whole cinnamon sticks

Blended Coffee, just like a Starbucks Frappuccino



Frappuccino ingredients: makes 2.5 cups (590 mL)

1 cup double-strength Starbucks coffee OR 3/4 cup fresh espresso (cold)
3/4 cup milk (low fat, 2%, whole or whatever)
3 tablespoons granulated sugar (or to taste)
2 cups ice
Secret ingredient: Pinch of xanthan gum OR 1 teaspoon dry pectin (keeps Frapp from separating)

Candy Cane Hot Chocolate Mix & Cocoa Spiced Latte

Candy Cane Hot Chocolate Mix


INGREDIENTS:
2 cups skim milk powder
1/2 cup Sucanat
1/2 cup unsweetened cocoa powder
2 Tbsp. peppermint tea leaves, crumbled
1 cup dark chocolate (70% cocoa or greater), chopped
Cinnamon sticks, for garnish, optional

* Stir together skim milke powder, sucanat, cocoa powder, tea leaves and dark chocolate.
Spoon into an airtight container, seal and store at room temperature for up to 1 month. *

To Brew: Stir 1/4cup hot chocolate mix into 1 cup very hot skim milk until mix is dissolved and well blended. Garnish with a cinnamon stick, if desired.

Cocoa Spiced Latte


INGREDIENTS:

3 cups low-fat milk
2 1/2 Tbsp. unsweetened natural cocoa powder
1 1/2 tsp. pure vanilla extract
1/4 scant tsp ground cardamom
3 cups strong brewed coffee (24oz.)
CE-approved sweetener, such as stevia (optional)

INSTRUCTIONS:

1. In a medium saucepan, combine milke, cocoa, vanilla and cardamom and place on medium-high.
(Keep a close eye on milke to avoid scorching and whisk frequently until steam begins to form, 5-10 minutes).

2. Reduce heat to medium-low and whish constantly until cocoa is dissolved and milk is hot and frothy; avoid boiling.

3. Fill six mugs halfway with coffe (about 1/2 cup each). Add about 1/2 cup hot milk mixture to each mug and serve with sweetener, as desired.
