Gina’s Famous Protein Zucchini Loaf


Ingredients:


-3 egg whites (45)
-1/2 cup oatmeal (140)
-1/2 cup zucchini, shredded (10)
-1 scoop vanilla protein powder (120)
-1 tsp vanilla extract (10)
-1 tsp baking powder
-touch of cinnamon
-2 packets Stevia (optional)
               total calories = 325

Directions:


Preheat oven to 350 degrees. Spray loaf pan well with non stick spray. 

Mix all ingredients in mixing bowl. 

Pour batter into loaf pan and place and into the oven for 30-35 minutes until golden brown
 and full cooked, all the way through. 

Remove from oven and allow to cool before serving. 

Enjoy as is or slice into pieces, toast and add a touch of nut butter or jam!
